Salmon with Pineapple Salsa

Salmon with Pineapple Salsa is a vibrant and flavorful dish that features tender, flaky salmon topped with a refreshing pineapple salsa. This dish balances the rich taste of salmon with the sweet and tangy notes of pineapple, making it a delightful choice for a healthy meal.

For a Serving Size of Two:

Ingredients:

  • 2 salmon fillets (about 150 grams each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh lime juice
  • 1/4 cup red onion, finely chopped (about 30 grams)
  • 1 small red bell pepper, diced (about 50 grams)
  • 1 small jalapeño, seeds removed and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 1 cup fresh pineapple, diced (about 150 grams)

Procedure:

  1. In a medium bowl, combine the diced pineapple, red onion, red bell pepper, jalapeño (if using), and cilantro. Drizzle with lime juice and season with salt and pepper. Mix well and set aside to let the flavors meld.
  2. Preheat your oven to 200°C (400°F).
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Drizzle with lime juice.
  4. Bake the salmon in the preheated oven for 12-15 minutes or until it flakes easily with a fork and is cooked to your liking.
  5. Once the salmon is done, plate the fillets and top with a generous portion of pineapple salsa. Serve immediately, garnished with lime wedges if desired.
