DIY Almond Milk

For a Serving Size of Two:
Ingredients:
- 80 grams raw almonds
- 4 cups water
- Additional water (for soaking)
- 1 – 2 tablespoons mashed dates
- Vanilla extract
Procedure:
- Place the raw almonds in a bowl and cover them with water. Soak for at least 8 hours or overnight. This softens the almonds and makes them easier to blend.
After soaking, drain and rinse the almonds under cool water. - In a blender, combine the soaked almonds with 4 cups of fresh water. Blend on high speed for 1-2 minutes until the mixture is smooth and creamy.
- Using a nut milk bag, cheesecloth, or a fine mesh sieve, strain the blended almond mixture into a large bowl or pitcher. Squeeze or press the bag/sieve to extract as much liquid as possible. The remaining almond pulp can be saved for other recipes (like energy bars or baking).
- If desired, return the strained almond milk to the blender and add dates and vanilla extract. Blend briefly to combine.
- Transfer the almond milk to a clean glass jar or bottle and refrigerate. It will keep for about 3-5 days. Shake well before use, as it may separate over time.
