DIY Almond Milk

DIY Almond Milk is a nutritious, dairy-free alternative that’s easy to make at home. Rich in vitamins and minerals, almond milk has a creamy texture and a subtle nutty flavor, making it a versatile addition to smoothies, coffee, cereals, or simply enjoyed on its own. By sweetening it with dates and adding vanilla extract, this homemade version becomes a delightful and wholesome beverage.

For a Serving Size of Two:

Ingredients:

  • 80 grams raw almonds
  • 4 cups water
  • Additional water (for soaking)
  • 1 – 2 tablespoons mashed dates
  • Vanilla extract

Procedure:

  • Place the raw almonds in a bowl and cover them with water. Soak for at least 8 hours or overnight. This softens the almonds and makes them easier to blend.
    After soaking, drain and rinse the almonds under cool water.
  • In a blender, combine the soaked almonds with 4 cups of fresh water. Blend on high speed for 1-2 minutes until the mixture is smooth and creamy.
  • Using a nut milk bag, cheesecloth, or a fine mesh sieve, strain the blended almond mixture into a large bowl or pitcher. Squeeze or press the bag/sieve to extract as much liquid as possible. The remaining almond pulp can be saved for other recipes (like energy bars or baking).
  • If desired, return the strained almond milk to the blender and add dates and vanilla extract. Blend briefly to combine.
  • Transfer the almond milk to a clean glass jar or bottle and refrigerate. It will keep for about 3-5 days. Shake well before use, as it may separate over time.
