Drumstick Soup

Drumstick Soup is a nourishing and aromatic dish featuring the unique flavor of moringa pods combined with tomatoes, onions, and a hint of cumin. This light and wholesome soup, enriched with the earthy essence of drumsticks and the warmth of spices, is perfect for a healthy appetizer or a comforting meal.
For a Serving Size of Two:
Ingredients:
- 200 grams chopped drumsticks
- 100 grams diced tomatoes
- 50 grams chopped onions
- 1 clove minced garlic
- 1 teaspoon olive oil
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon black pepper powder
- 1/4 teaspoon salt, or to taste
- 400 ml vegetable stock or water
- 1 tablespoon chopped fresh coriander leaves, for garnish
Procedure:
- Heat olive oil in a pot over medium heat. Add cumin seeds and let them splutter. Add chopped onions and garlic, and sauté until translucent.
- Add the chopped drumsticks and diced tomatoes. Stir in turmeric powder and cook for 3–4 minutes.
- Pour in the vegetable stock or water. Cover and simmer for 15–20 minutes until the drumsticks are tender.
- Remove the drumsticks and scrape the pulp using a spoon. Discard the fibrous shells and add the pulp back to the soup.
- For a smooth texture, use an immersion blender to partially purée the soup.
- Add black pepper powder and salt. Adjust seasoning to taste.
- Ladle the soup into bowls and garnish with fresh coriander leaves. Serve warm.
