Earthy Cauliflower with Roasted Cashew

Earthy Cauliflower with Roasted Cashews is a delightful mix of roasted cauliflower florets, infused with cumin and turmeric, complemented by the crunch of roasted cashews. A touch of lemon juice adds a refreshing zing, while fresh coriander gives it a fragrant finish, making this a flavorful and nutritious dish.

For a Serving Size of Two:

Ingredients:

  • 200 grams cauliflower florets
  • 20 grams roasted cashews
  • 1 teaspoon olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh coriander leaves

Procedure:

  • Toss cauliflower florets in olive oil, cumin, turmeric, salt, and pepper.
  • Roast in the oven at 180°C for 20-25 minutes until tender and golden.
  • Add roasted cashews and drizzle with lemon juice.
