Earthy Cauliflower with Roasted Cashews is a delightful mix of roasted cauliflower florets, infused with cumin and turmeric, complemented by the crunch of roasted cashews. A touch of lemon juice adds a refreshing zing, while fresh coriander gives it a fragrant finish, making this a flavorful and nutritious dish.
For a Serving Size of Two:
Ingredients:
- 200 grams cauliflower florets
- 20 grams roasted cashews
- 1 teaspoon olive oil
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- Salt and pepper, to taste
- 1 tablespoon lemon juice
- 1 teaspoon fresh coriander leaves
Procedure:
- Toss cauliflower florets in olive oil, cumin, turmeric, salt, and pepper.
- Roast in the oven at 180°C for 20-25 minutes until tender and golden.
- Add roasted cashews and drizzle with lemon juice.
- Garnish with fresh cilantro and serve warm.
