Egg Appe is a savory Indian dish that combines eggs with a variety of vegetables and spices, cooked in an appe pan to create bite-sized, golden-brown rounds. This dish features a blend of finely chopped veggies and spices. The eggs are whisked to create a smooth, flavorful batter, which is then cooked in a well-greased pan until the edges are crispy and the center is perfectly set. Serve these delicious egg appes hot with chutney or sauce for a delightful breakfast or snack.
For a Serving Size of Two:
Ingredients:
- 3 large eggs
- 50 grams finely chopped onion
- 50 grams finely chopped tomato
- 1 green chili, finely chopped
- 30 grams grated carrots
- 30 grams chopped bell peppers
- 1 tablespoon chopped coriander leaves
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/4 teaspoon cumin seeds
- Salt to taste
- 1 teaspoon oil for greasing the appe pan
Procedure:
- Crack the eggs into a bowl and whisk them until well beaten.
- Add chopped onion, tomato, green chili, grated carrots, chopped bell peppers, coriander leaves, turmeric powder, red chili powder, cumin seeds, and salt to the beaten eggs.
- Mix well until all ingredients are combined.
- Heat an appe pan over medium heat.
- Grease each cavity of the pan with a small amount of oil using a brush or spoon.
- Once the pan is hot, pour the egg mixture into each cavity, filling them about 3/4 full.
- Cover the pan with a lid and cook for about 3-4 minutes, or until the edges start to turn golden and the center is set. Use a fork or skewer to gently flip the appe and cook for another 2-3 minutes, or until golden brown and cooked through.
- Remove the egg appe from the pan and serve hot with your favorite chutney or sauce.
