This delightful breakfast features perfectly poached eggs served atop toasted multigrain or sourdough bread, smothered in a rich and creamy Hollandaise sauce. The sauce is made with Greek yogurt, egg yolks, and a blend of tangy lime juice and mustard, creating a flavorful and velvety topping. The poached eggs are cooked to a tender consistency, adding a luscious touch to the crispy toast. This dish is a sophisticated and satisfying option, ideal for a special breakfast
For a Serving Size of Two:
Ingredients
- 2 whole eggs
- 2 slices of multigrain bread or sourdough bread
- Salt and Black Pepper as per taste
For Hollandaise Sauce:
- 50 grams greek yoghurt
- 2 eggs yolk
- 1 tablespoon lime juice
- 1/2 teaspoon mustard sauce
- 1/4 teaspoon garlic powder
- Seasonings
Procedure:
- For the Hollandaise Sauce:
- Add yogurt, lemon juice, and egg yolks over a double broiler and beat to combine.
- Heat the mixture over approximately 1 inch simmering water, stirring frequently, for 15 minutes, or until sauce has thickened.
- Stir in mustard sauce, cumin, paprika, red pepper flakes, salt and pepper. The sauce is ready.
For the Eggs:
- Heat water in a shallow pan and reduce to simmer as soon as the water comes to a boil.
- Gently break the egg into the water and let them poach for 3-4 minutes.
- Toast bread and cut them half into slices.
- Place the sauce on top of toast and then a poached egg.
