For a Serving Size of Two:

Ingredients:

  • 40 grams foxtail millet flour
  • 50 grams whole wheat flour
  • 1 ripe banana (about 90 grams, mashed)
  • 60 ml freshly squeezed orange juice
  • 1 teaspoon orange zest
  • 2 tablespoons olive oil
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • 1/4 teaspoon cinnamon powder (optional)
  • 1/2 teaspoon vanilla extract (optional)

Procedure:

  • Preheat your oven to 180°C (350°F) and line a small cake tin with parchment paper or lightly grease it.

  • In another bowl, mix the mashed banana, orange juice, orange zest, oil, and vanilla extract.
  • Gradually add the wet ingredients into the dry ingredients and gently fold until just combined. Avoid over-mixing to ensure a soft texture.
  • Pour the batter into the prepared cake tin and smooth the top. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool for a few minutes before transferring it to a wire rack to cool completely. Serve as a light dessert.
