Eggless Orange Cake

This Eggless Orange Cake is a wholesome and nutritious treat, sweetened naturally with banana. The combination of millet flour and orange juice creates a unique flavor, while the mashed banana adds moisture and natural sweetness. It’s a perfect guilt-free cake for those looking to enjoy a dessert that’s both tasty and healthy.
For a Serving Size of Two:
Ingredients:
- 40 grams foxtail millet flour
- 50 grams whole wheat flour
- 1 ripe banana (about 90 grams, mashed)
- 60 ml freshly squeezed orange juice
- 1 teaspoon orange zest
- 2 tablespoons olive oil
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- A pinch of salt
- 1/4 teaspoon cinnamon powder (optional)
- 1/2 teaspoon vanilla extract (optional)
Procedure:
- Preheat your oven to 180°C (350°F) and line a small cake tin with parchment paper or lightly grease it.
- In a bowl, combine the millet flour, whole wheat flour, baking powder, baking soda, cinnamon powder, and a pinch of salt.
- In another bowl, mix the mashed banana, orange juice, orange zest, oil, and vanilla extract.
- Gradually add the wet ingredients into the dry ingredients and gently fold until just combined. Avoid over-mixing to ensure a soft texture.
- Pour the batter into the prepared cake tin and smooth the top. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for a few minutes before transferring it to a wire rack to cool completely. Serve as a light dessert.
