Exotic Stir-fry Vegetables

Exotic Stir-Fry Vegetables is a colorful and vibrant dish that features a medley of fresh, crisp vegetables stir-fried to perfection. Enhanced with aromatic ginger and garlic and finished with a savory soy sauce, this dish is not only visually appealing but also packed with flavor, making it a perfect side or main dish for any meal.
For a Serving Size of Two:
Ingredients:
- 1 cup (150 grams) broccoli florets
- 1 cup (150 grams) bell peppers (mixed colors), sliced
- 1 cup (150 grams) snow peas or snap peas
- 1 cup (150 grams) baby corn, sliced
- 1 cup (150 grams) mushrooms, sliced
- 1 medium carrot, julienned (about 50 grams)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil (or olive oil)
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon sesame seeds (for garnish)
- Fresh cilantro or green onions for garnish (optional)
Procedure:
- Wash and chop all the vegetables as instructed. Set them aside.
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the minced garlic and ginger to the hot oil. Sauté for about 30 seconds until fragrant, being careful not to burn them.
- Add the broccoli, bell peppers, snow peas, baby corn, mushrooms, and carrots to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
- Drizzle the soy sauce over the vegetables, adding red pepper flakes if you like a bit of heat. Stir well to coat the vegetables in the sauce and cook for an additional 1-2 minutes.
