Fluffy Omelette with Cashew

The Fluffy Omelette with Cashew is a delightful breakfast or brunch option that combines the richness of eggs with the crunch of cashews and the freshness of vegetables. This omelette is fluffy and light, thanks to the addition of milk, and is packed with flavorful ingredients that provide both texture and taste. The cashews add a unique crunch, while the combination of bell peppers, onions, spinach, and tomatoes offers a well-rounded, nutritious meal.

For a Serving Size of Two:

Ingredients:

  • 3 whole eggs
  • 2 tablespoons milk
  • 15 grams chopped cashews
  • 50 grams diced bell peppers
  • 50 grams diced onions
  • 50 grams chopped spinach
  • 50 grams diced tomatoes
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon turmeric powder

Procedure:

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add the diced onions and bell peppers. Sauté for 3-4 minutes until softened. Add the chopped spinach and diced tomato. Cook for an additional 2 minutes until the spinach is wilted.
  3. Stir in the chopped cashews and cook for another minute. Remove the veggie mixture from the skillet and set aside.
  4. In a bowl, whisk together the eggs, milk, black pepper, salt, paprika, and turmeric powder until well combined and frothy. The milk helps make the omelette fluffier.
  5. Wipe out the skillet and heat a small amount of oil or non-stick spray over medium heat. Pour the egg mixture into the skillet and cook undisturbed for 1-2 minutes until the edges start to set.
  6. Gently lift the edges of the omelette with a spatula, allowing the uncooked egg to flow to the edges.
  7. Once the eggs are mostly set but still slightly runny on top, spread the cooked veggie and cashew mixture evenly over one half of the omelette.
  8. Carefully fold the other half of the omelette over the filling.
    Cook for an additional 1-2 minutes until the omelette is fully set and cooked through.
  9. Slide the omelette onto a plate and cut into wedges if desired. Garnish with fresh herbs or a sprinkle of additional black pepper if you like.
