French Crepes with Basil and Feta Recipe

Preparing for a Sunday brunch? What’s better than having an exemplary healthy and filling French Crepes. These feta and basil filled crepes are an amazing mix of nutritious and delicious.

Ingredients
For crepes:
- 20 ml whole fat milk
- 20 grams multigrain flour
- 1 teaspoon vegan butter, melted
- 1 teaspoon jaggery
- 1 teaspoon vegetable oil
- Salt to taste
For the filling:
- 20 grams basil
- 10 grams crumbled feta cheese
- 15 grams whisked Greek yogurt

Method:
- Mix all the dry and the wet ingredients separately and then combine. Gently whisk till no lumps remain. Cover and refrigerate it for at least 2-2½ hours.
- Heat a flat pan over medium-low flame and grease with oil. Pour about 2 tablespoons of crepe batter and twirl around to coat the pan. Make sure that the batter spreads out evenly.
- Flip the crepe and begin layering the filling with feta and basil. Cover half of the crepe with filling and flip over to the other half of the filled side. Grease it with vegan butter and crisp it accordingly.
- Serve with Greek style yogurt on the side.
