Gajar Gojju

For a Serving Size of Two:
Ingredients:
- 200 grams grated carrots
- 50 grams finely chopped onion
- 30 grams finely chopped tomato
- 1 – 2 finely chopped green chilies
- 1 teaspoon grated ginger
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- Salt (to taste)
- 1 teaspoon grated jaggery
- 2 teaspoon oil
- 1 tablespoon chopped coriander leaves
- 50 ml water (adjust as needed)
Procedure:
- In a pan, heat the oil over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
- Add the finely chopped onion and sauté until it becomes translucent. Then add the ginger and green chili, cooking for another minute.
- Stir in the chopped tomato and cook until it softens.
- Add the grated carrots, turmeric powder, salt, and jaggery. Mix well and sauté for a few minutes.
- Pour in the water and cover the pan. Let it simmer for about 5-7 minutes or until the carrots are cooked through and tender. Stir occasionally and add more water if needed to achieve a desired consistency.
- Once the carrots are cooked, turn off the heat and garnish with chopped coriander leaves. Serve warm with rice or chapati.
