Gajar ki Kanji

Winters bring in the amazing carrots that are used for preparing all the favorite recipes. Kanji is a traditional fermented drink prepared in the northern region during the winters. It is prepared using very simple ingredients and helps in keeping the body warm. It is the perfect appetizer that has a sour taste and is extremely good for gut health.
For a Serving Size of Two:
Ingredients:
- 200 grams black carrots, peeled and cut into thin slices
- 200 grams regular carrots peeled and cut into thin slices
- 1 tablespoon mustard seeds
- 1 tablespoon fenugreek seeds
- 1 tablespoon roasted cumin powder
- 1 tablespoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 tablespoon salt
- 1 liter water
- 1 tablespoon sugar (optional)
- 1/2 teaspoon black pepper
Procedure:
- Peel and slice the black and regular carrots into thin rounds or sticks.
- In a small bowl, mix the mustard seeds, fenugreek seeds, roasted cumin powder, red chili powder, turmeric powder, salt, and black pepper .
- In a large, clean glass jar or ceramic container, add the sliced carrots. Sprinkle the prepared spice mix over the carrots and toss to coat evenly.
- Pour 1 liter of water into the jar, making sure the carrots are fully submerged. You can adjust the amount of water as needed.
- If you prefer a slightly sweet taste, add 1 tablespoon of sugar. Stir to combine.
- Cover the jar with a clean cloth or a lid that allows for air flow (not airtight). Leave the jar at room temperature for 3-4 days to ferment.
- Taste the kanji after 3 days. It should have a tangy flavor and a slight fizz. If you prefer a stronger flavor, let it ferment for an additional day.
- Once fermented to your liking, seal the jar with a tight-fitting lid and refrigerate. The kanji can be consumed cold or at room temperature.
- Serve the Gajar Ki Kanji chilled, as a refreshing and tangy drink or as an accompaniment to meals.
