Garlic Delicata

Tender delicata squash is combined with fragrant garlic to prepare a very simple yet delicious dish. It is prepared using simple ingredients and is a creamy rustic side dish.

Nutritional benefits:
Squash is low in calories but high in many nutrients, including vitamin A, vitamin C, magnesium, and potassium. They are good in fiber and help in digestion, they also improve eye health and promote the production of healthy blood cells. Garlic has antimicrobial properties and helps to get rid of the common cold and has also been shown to improve cholesterol levels.

Ingredients:

  • 80 grams delicata squash
  • 1 teaspoon of olive oil
  • 1 teaspoon garlic
  • 1 teaspoon parsley
  • Salt and seasoning as per taste

Method:

  • Start by preheating the oven at around 190º C.
  • Oil in the baking dish.
  • Wash the squash and peel it in half lengthwise( don’t forget to remove the seeds).
  • Cut them into medium-sized slices and place them on the baking dish.
  • Toss some chopped garlic, olive oil, and parsley over it.
  • Allow it to bake for about 30 minutes
  • Sprinkle salt and seasonings.
  • Serve when tender and enjoy.
