Garlicky Honey Chicken with Veggies is a delightful combination of tender, juicy chicken coated in a sweet and savory garlic honey sauce, paired with vibrant, sautéed vegetables. It’s a perfect quick and healthy meal that satisfies both sweet and savory cravings.
For a Serving Size of Two:
Ingredients:
- For the Chicken:
- 250 grams chicken breast, cut into bite-sized pieces
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp soy sauce (low sodium)
- 1 tbsp olive oil
- 1/2 tsp black pepper
- 1/4 tsp salt (adjust to taste)
- 1 tsp lemon juice
For the Veggies:
- 100 grams broccoli florets
- 100 grams bell peppers, sliced
- 50 grams carrots, sliced
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- Salt and pepper to taste
Procedure:
- Marinate the Chicken: In a bowl, mix honey, minced garlic, soy sauce, black pepper, salt, and lemon juice. Add the chicken pieces, coating them well, and marinate for at least 15-20 minutes.
- Cook the Veggies: Heat 1 tbsp olive oil in a pan over medium heat. Add the broccoli, bell peppers, and carrots. Sprinkle with garlic powder, salt, and pepper. Sauté for 5-7 minutes until slightly tender but still crisp. Remove and set aside.
- Cook the Chicken: In the same pan, add 1 tbsp olive oil and cook the marinated chicken on medium heat for 5-7 minutes, flipping halfway through, until the chicken is golden and cooked through. If needed, add a splash of water to help the sauce coat the chicken.
- Combine and Serve: Once the chicken is cooked, toss the sautéed veggies with the chicken. Serve hot, garnished with sesame seeds or cilantro if desired.
