The Ginger Beetroot & Carrot Salad is a vibrant and nutritious dish that combines the earthy sweetness of beetroot with the crispness of carrots, all enhanced by the zesty warmth of fresh ginger. For a Serving Size of Two:
Ingredients:
- 150 grams grated raw beetroot
- 150 grams grated carrots
- 1 tablespoon grated ginger
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh coriander or parsley, chopped
Procedure:
- In a large mixing bowl, combine the grated beetroot and grated carrots.
- Add the grated ginger to the bowl with the beetroot and carrots, mixing well.
- In a separate small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well combined.
- Pour the dressing over the grated vegetables and toss everything together until well coated.
