Gnocchi

Homemade Gnocchi is a delightful Italian dish made from tender potatoes, flour, and optionally an egg for binding. These soft, pillowy dumplings are quick to prepare and can be paired with a variety of sauces or sautéed for a simple, delicious meal. Perfect for any occasion, gnocchi is a comforting and satisfying choice.

For a Serving Size of Two:

Ingredients:

  • 200 grams potatoes
  • 100 grams all-purpose flour (plus extra for dusting)
  • 1 small egg (optional, for binding)
  • 1/4 tsp salt
  • A pinch of nutmeg (optional)

Procedure:

  1. Cook the Potatoes: Boil the potatoes with their skins on until tender, about 20-30 minutes. Drain and let them cool slightly, then peel and mash until smooth.
  2. Make the Dough: In a large bowl, combine the mashed potatoes, flour, salt, and nutmeg (if using). If using, add the egg. Mix until a soft dough forms. Avoid overworking the dough.
  3. Shape the Gnocchi: Lightly flour a clean surface and divide the dough into sections. Roll each section into a long rope, about 1 cm thick. Cut into bite-sized pieces (around 2 cm).
  4. Form the Gnocchi: Use a fork to gently press down on each piece to create ridges. This helps sauce cling better.
  5. Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi in batches; they are done when they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
  6. Serve: Toss with your favorite sauce, or sauté with olive oil and garlic for a simple preparation. Garnish with grated cheese or fresh herbs.
