Golden Lemon Rice

Golden Lemon Rice is a vibrant and flavorful dish featuring fragrant basmati rice infused with the tangy taste of fresh lemon juice and the warmth of turmeric. A traditional South Indian-inspired recipe, this dish is light, zesty, and perfect as a side or main meal.

For a Serving Size of Two:

Ingredients:

  • 100 grams basmati rice (uncooked)
  • 1 tbsp olive oil or ghee
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1 dried red chili (optional)
  • 5-6 curry leaves
  • 1 small onion, finely chopped (about 50 grams)
  • 1 green chili, slit (optional)
  • 1 tbsp peanuts or cashews (optional, for crunch)
  • 2 tbsp fresh lemon juice
  • Salt to taste
  • Fresh cilantro for garnish

Procedure:

  1. Cook the Rice: Rinse the basmati rice under cold water until the water runs clear. Cook the rice with 200 ml water until soft but not mushy. Fluff with a fork and set aside to cool slightly.
  2. Prepare the Tempering: In a pan, heat the olive oil or ghee over medium heat. Add mustard seeds and let them crackle. Add the dried red chili, curry leaves, and peanuts/cashews (if using). Sauté for 1-2 minutes until fragrant and the nuts are lightly toasted.
  3. Sauté Aromatics: Add the chopped onion and green chili to the pan. Cook for 3-4 minutes until the onions soften and turn golden. Stir in the turmeric powder and cook for another minute.
  4. Add Lemon and Rice: Reduce the heat to low. Stir in the cooked rice, salt, and lemon juice. Mix well, ensuring the rice is evenly coated with the turmeric and lemon.
  5. Garnish and Serve: Garnish with fresh cilantro and serve warm with a side of yogurt, pickle, or as a side dish to a main meal.
