Golden Lemon Rice

Golden Lemon Rice is a vibrant and flavorful dish featuring fragrant basmati rice infused with the tangy taste of fresh lemon juice and the warmth of turmeric. A traditional South Indian-inspired recipe, this dish is light, zesty, and perfect as a side or main meal.
For a Serving Size of Two:
Ingredients:
- 100 grams basmati rice (uncooked)
- 1 tbsp olive oil or ghee
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1 dried red chili (optional)
- 5-6 curry leaves
- 1 small onion, finely chopped (about 50 grams)
- 1 green chili, slit (optional)
- 1 tbsp peanuts or cashews (optional, for crunch)
- 2 tbsp fresh lemon juice
- Salt to taste
- Fresh cilantro for garnish
Procedure:
- Cook the Rice: Rinse the basmati rice under cold water until the water runs clear. Cook the rice with 200 ml water until soft but not mushy. Fluff with a fork and set aside to cool slightly.
- Prepare the Tempering: In a pan, heat the olive oil or ghee over medium heat. Add mustard seeds and let them crackle. Add the dried red chili, curry leaves, and peanuts/cashews (if using). Sauté for 1-2 minutes until fragrant and the nuts are lightly toasted.
- Sauté Aromatics: Add the chopped onion and green chili to the pan. Cook for 3-4 minutes until the onions soften and turn golden. Stir in the turmeric powder and cook for another minute.
- Add Lemon and Rice: Reduce the heat to low. Stir in the cooked rice, salt, and lemon juice. Mix well, ensuring the rice is evenly coated with the turmeric and lemon.
- Garnish and Serve: Garnish with fresh cilantro and serve warm with a side of yogurt, pickle, or as a side dish to a main meal.
