Green Apple and Black-Eyed Peas Salad

For a Serving Size of Two:
Ingredients:
- 120 grams cooked black-eyed peas
- 1 medium diced green apple (approximately 150 grams)
- 50 grams diced cucumber
- 30 grams finely chopped red onion
- 30 grams diced bell pepper (any color)
- 15 grams chopped coriander
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon cumin powder
- Salt and pepper to taste
Procedure:
- In a large mixing bowl, combine the cooked black-eyed peas, diced green apple, cucumber, red onion, and bell pepper.
- In a separate small bowl, whisk together the olive oil, lemon juice, cumin powder, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly.
- Fold in the chopped fresh coriander for added flavor and freshness.
- Enjoy immediately, or let the salad chill in the refrigerator for about 15-20 minutes to enhance the flavors before serving.
