Green Eggs are a vibrant and nutritious twist on traditional scrambled eggs, infused with the rich flavors of blanched spinach, fresh basil, and creamy feta cheese. This dish combines the bright green hue and health benefits of leafy greens with the satisfying texture of soft, fluffy eggs. Perfect for breakfast or brunch, Green Eggs pair wonderfully with whole-grain toast or avocado slices for a wholesome and balanced meal.
For a Serving Size of Two:
Ingredients:
- 2 large eggs
- 50 grams blanched spinach
- 20 grams fresh basil leaves
- 1 clove minced garlic
- 2 tablespoons milk
- 1 teaspoon olive oil
- 30 grams feta cheese, crumbled
- 1/4 teaspoon black pepper
- 1/4 teaspoon red chili flakes
- Salt to taste
- Fresh herbs for garnish
Procedure:
- In a blender or food processor, combine the spinach, basil leaves, garlic, and milk. Blend until smooth and creamy. Set aside.
- In a bowl, whisk the eggs with a pinch of salt and black pepper.
- Heat a non-stick pan over medium heat and add the olive oil.
- Pour the whisked eggs into the pan, allowing them to spread out evenly.
- Once the eggs start to set slightly, pour the green spinach-basil mixture over them.
- Stir gently to combine, ensuring the eggs are fully coated in the green mixture.
- Continue to cook the eggs, stirring occasionally, until they are fully set but still soft and fluffy.
- Sprinkle the crumbled feta cheese and red chili flakes over the eggs.
- Stir gently to incorporate the feta, allowing it to melt slightly into the eggs.
- Serve the Green Eggs hot, garnished with fresh herbs.
