Green Eggs

Green Eggs are a vibrant and nutritious twist on traditional scrambled eggs, infused with the rich flavors of blanched spinach, fresh basil, and creamy feta cheese. For a Serving Size of Two:

Ingredients:

  • 2 large eggs
  • 50 grams blanched spinach
  • 20 grams fresh basil leaves
  • 1 clove minced garlic
  • 2 tablespoons milk
  • 1 teaspoon olive oil
  • 30 grams feta cheese, crumbled
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red chili flakes
  • Salt to taste
  • Fresh herbs for garnish

Procedure:

  • In a blender or food processor, combine the spinach, basil leaves, garlic, and milk. Blend until smooth and creamy. Set aside.
  • In a bowl, whisk the eggs with a pinch of salt and black pepper.
  • Heat a non-stick pan over medium heat and add the olive oil.
  • Pour the whisked eggs into the pan, allowing them to spread out evenly.
  • Once the eggs start to set slightly, pour the green spinach-basil mixture over them.
  • Stir gently to combine, ensuring the eggs are fully coated in the green mixture.
  • Continue to cook the eggs, stirring occasionally, until they are fully set but still soft and fluffy.
  • Sprinkle the crumbled feta cheese and red chili flakes over the eggs.
  • Stir gently to incorporate the feta, allowing it to melt slightly into the eggs.
  • Serve the Green Eggs hot, garnished with fresh herbs.
