Healthy Burrito Bowl

The Healthy Burrito Bowl is a colorful and satisfying meal featuring a base of brown rice topped with seasoned black beans, corn, fresh vegetables, and creamy avocado. Drizzled with lime juice and sprinkled with cilantro, this bowl is a nutritious and delicious option for a balanced lunch or dinner.
For a Serving Size of Two:
Ingredients:
- 60 grams brown rice
- 60 grams cooked black beans/ kidney beans
- 50 grams cooked corn kernels
- 50 grams halved cherry tomatoes
- 50 grams diced red bell pepper
- 50 grams diced cucumber
- 30 grams finely chopped red onion
- 1 sliced avocado
- 1 tablespoon fresh cilantro,
- 1 tablespoon lime juice
- 1 teaspoon cumin powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 teapsoons olive oil
Procedure:
- Keep the rice for cooking. While the rice is cooking, dice the cherry tomatoes, red bell pepper, cucumber, and red onion. Slice the avocado and chop the cilantro.
- In a pan, heat olive oil over medium heat. Add the cooked black beans and corn kernels, and season with cumin powder, smoked paprika, chili powder, salt, and pepper.
- Cook for 3-5 minutes until warmed through and well-seasoned.
- Divide the cooked brown rice between two bowls. Top each bowl with the seasoned black beans and corn, diced vegetables (tomatoes, bell pepper, cucumber, and red onion), and sliced avocado.
- Drizzle each bowl with lime juice and sprinkle with chopped cilantro. Add any optional toppings like Greek yogurt, salsa, or shredded cheese if desired. Serve immediately and enjoy this wholesome and filling burrito bowl.
