Rice Pudding

This Healthy Rice Pudding is a naturally sweetened, creamy dessert that uses mashed banana and a hint of cinnamon for added warmth. It’s a light and delicious option that maintains the classic comfort of traditional rice pudding without added sugars.
For a Serving Size of Two:
Ingredients:
- 60 grams brown rice
- 250 ml milk
- 80 grams mashed banana
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon vanilla extract
- 1 tablespoon chopped almonds and raisins (for garnish)
Procedure:
- Rinse the rice thoroughly. In a pot, add the rice with double the amount of water, and cook until tender (about 20-25 minutes for brown rice or 10-15 minutes for white rice). Drain any excess water.
- To the cooked rice, add the almond milk, mashed banana, cinnamon powder, and vanilla extract. Stir well and let it simmer on low heat for about 10 minutes, stirring occasionally until it thickens.
- Once the pudding has reached a creamy consistency, remove from heat. Divide into serving bowls and garnish with chopped almonds and raisins.
