Hummus-Ful Pumpkin Salad

The Hummus-Ful Pumpkin Salad is a delightful fusion of flavors and textures, combining the creaminess of hummus with the hearty goodness of roasted pumpkin and fava beans. For a Serving Size of Two:
Ingredients:
- 200 grams diced pumpkin
- 100 grams cooked fava beans (ful)
- 100 grams hummus
- 50 grams halved cherry tomatoes
- 50 grams diced cucumber
- 30 grams thinly sliced red onion
- 2 teaspoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon cumin powder
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Procedure:
- Preheat the oven to 200°C (400°F). Toss the diced pumpkin in olive oil, salt, and pepper. Spread it on a baking sheet and roast for about 25-30 minutes or until tender and slightly caramelized. Allow to cool.
- In a large mixing bowl, combine the roasted pumpkin, cooked fava beans, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together the hummus, lemon juice, cumin powder, and a bit of water to thin it out if necessary. Adjust the seasoning with salt and pepper.
- Drizzle the hummus dressing over the salad and gently toss everything together until well coated.
- Garnish with chopped parsley and serve immediately or chill for a while to allow the flavors to meld.
