Hummus-Ful Pumpkin Salad

The Hummus-Ful Pumpkin Salad is a delightful fusion of flavors and textures, combining the creaminess of hummus with the hearty goodness of roasted pumpkin and fava beans. For a Serving Size of Two:

Ingredients:

  • 200 grams diced pumpkin
  • 100 grams cooked fava beans (ful)
  • 100 grams hummus
  • 50 grams halved cherry tomatoes
  • 50 grams diced cucumber
  • 30 grams thinly sliced red onion
  • 2 teaspoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin powder
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Procedure:

  • Preheat the oven to 200°C (400°F). Toss the diced pumpkin in olive oil, salt, and pepper. Spread it on a baking sheet and roast for about 25-30 minutes or until tender and slightly caramelized. Allow to cool.
  • In a large mixing bowl, combine the roasted pumpkin, cooked fava beans, cherry tomatoes, cucumber, and red onion.
  • In a small bowl, whisk together the hummus, lemon juice, cumin powder, and a bit of water to thin it out if necessary. Adjust the seasoning with salt and pepper.
