Instant Pot Tomato Rice

Instant Pot Tomato Rice is a quick and flavorful one-pot dish, combining basmati rice with tangy tomatoes, aromatic spices, and a hint of heat. It’s perfect for a tasty, balanced meal or as a side.
For a Serving Size of Two:
Ingredients:
- 1 cup (200 grams) basmati rice, rinsed and drained
- 1 medium onion (about 100 grams), finely chopped
- 1 medium tomato (about 100 grams), chopped
- 1/4 cup tomato puree (60 ml)
- 1 green chili, chopped (optional)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1 teaspoon garam masala
- 1 tablespoon olive oil or ghee
- 1 1/2 cups (360 ml) water or vegetable broth
- Salt to taste
- Fresh coriander, chopped, for garnish
Procedure:
- Set the Instant Pot to “Sauté” mode, add olive oil or ghee, and let it heat up. Add cumin seeds and mustard seeds, letting them splutter.
- Add the chopped onion and sauté until golden brown, about 3-4 minutes. Add ginger-garlic paste and green chili, and cook for 1 minute until fragrant.
- Stir in the chopped tomato, tomato puree, turmeric powder, and garam masala, cooking until the tomatoes soften, about 3-4 minutes.
- Add the rinsed rice and stir to coat it well with the spices and tomato mixture.
- Pour in the water or vegetable broth and add salt to taste. Mix everything well and secure the lid.
- Set the Instant Pot to “Pressure Cook” on high for 5 minutes. After cooking, let the pressure release naturally for 10 minutes, then carefully do a quick release if needed.
- Fluff the rice gently with a fork, garnish with fresh coriander, and serve hot.
