Jouthpuri Pulao

Jouthpuri Pulao is a vibrant and wholesome rice dish loaded with vegetables and aromatic spices. This easy-to-make dish is perfect for a comforting meal and is packed with flavors that bring a touch of warmth to the dining table. Whether enjoyed alone or paired with raita, it’s a delightful option for lunch or dinner.
For a Serving Size of Two:
Ingredients:
- 60 grams basmati rice (or your choice of rice)
- 100 grams mixed vegetables (carrots, peas, beans, finely chopped)
- 50 grams chopped onions
- 50 grams chopped tomatoes
- 1 tablespoon ginger-garlic paste
- 2 teaspoon mustard oil
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder
- Salt to taste
- 1-2 green chilies, slit
- 1-2 cups water
- Fresh coriander leaves for garnish
Procedure:
- Rinse the basmati rice under cold water until the water runs clear. Soak for 20-30 minutes, then drain.
- Heat oil in a heavy-bottomed pan over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add the chopped onions. Sauté until they turn golden brown.
- Add ginger-garlic paste and slit green chilies, cooking until the raw smell disappears.
- Then, add the chopped tomatoes and cook until soft.
- Stir in the mixed vegetables, turmeric powder, red chili powder, and salt. Cook for about 5-7 minutes until the vegetables are tender.
- Add the soaked and drained rice to the pan, mixing gently to combine. Pour in water (about 1.5-2 cups depending on the rice type) and bring to a boil.
- Reduce the heat to low, cover the pan, and let it cook for about 15-20 minutes or until the rice is cooked and the water is absorbed. If using basmati rice, check for doneness, as it may require less time.
- Once cooked, fluff the pulao gently with a fork. Sprinkle garam masala on top and let it rest for a few minutes before serving.
- Garnish with fresh coriander leaves and serve hot with raita or your choice of side dish.
