Ingredients:
- 100 grams sweet potato, peeled and thinly sliced
- 50 grams kale, chopped
- 2 large eggs
- 30 ml milk
- 50 grams finely chopped onions
- 1 clove minced garlic
- 1/2 teaspoon olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon red chili flakes
- 1/4 teaspoon salt
- 1 tablespoon grated cheese
Procedure:
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in an oven-safe skillet over medium heat. Add the thinly sliced sweet potato to the skillet and cook for 5-7 minutes until softened and lightly browned, stirring occasionally.
- Add the chopped onion to the skillet with the sweet potatoes and cook until translucent, about 3 minutes.
- Add the minced garlic and chopped kale, cooking for an additional 2-3 minutes until the kale is wilted.
- In a bowl, whisk together the eggs, milk, salt, black pepper, and red chili flakes and cheese.
- Pour the egg mixture over the sweet potato, onion, and kale in the skillet. Stir gently to combine the ingredients evenly.
- Transfer the skillet to the preheated oven. Bake for 10-15 minutes, or until the eggs are set and the top is slightly golden. If you want a more golden top, you can broil for an additional 1-2 minutes, watching closely to prevent burning.
- Let the frittata cool slightly before slicing.
- Serve warm, garnished with additional black pepper or fresh herbs if desired.
