Khandeshi Dal

Khandeshi Dal is a traditional Maharashtrian dish known for its spicy and robust flavors. The dish is characterized by the use of bold spices like red chili powder and goda masala, creating a comforting and satisfying meal when paired with rice or flatbreads.

For a Serving Size of Two:

Ingredients:

  • Wash and soak the toor dal for 30 minutes. Drain and pressure cook the dal with 250 ml water and turmeric for 3-4 whistles or until soft. Mash the dal lightly and set aside.
  • Heat oil in a pan. Add mustard seeds and cumin seeds, and let them splutter.
  • Add asafoetida and minced garlic, sautéing until the garlic turns golden.
    Add finely chopped onions and sauté until they become translucent.
    Add chopped tomatoes and cook until they become soft and mushy.
    Add red chili powder and goda masala to the pan. Stir well to incorporate the spices.
  • Add the cooked dal to the mixture and season with salt.
  • Simmer the dal on low heat for 5-6 minutes, adjusting the consistency with water if needed.
  • Garnish the Khandeshi Dal with freshly chopped coriander leaves and serve hot with steamed rice or bhakri (millet flatbread).

Procedure:

  • In a large bowl, combine bell peppers, zucchini, broccoli, cherry tomatoes, and red onion.
  • Drizzle with olive oil and toss to coat.
    Add smoked paprika, cumin powder, garlic powder, salt, and black pepper to the vegetables.
  • Toss well to ensure even coating of spices.
  • Heat a grill pan or regular pan over medium-high heat.
  • Add the vegetables to the pan in a single layer.
  • Cook for 5-7 minutes, turning occasionally until vegetables are tender and slightly charred.
  • Remove the vegetables from the pan and drizzle with lemon juice.
  • Serve hot as a side dish or enjoy them on their own.
