Khus Sherbet

Ingredients:
- 60 grams khus grass (vetiver) roots, cleaned and chopped
- 1 liter water
- 30 ml lemon juice
- 2 tablespoons jaggery
- Ice cubes
- Fresh mint leaves
Procedure:
- In a saucepan, add the chopped khus grass and water. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes until the water is infused with the khus flavor and color.
- Remove from heat and strain the liquid through a fine sieve or muslin cloth into a pitcher, discarding the khus grass.
- Stir in the lemon juice and jaggery until dissolved. Adjust sweetness to taste.
- Fill glasses with ice cubes, pour the khus sherbet over the ice, and garnish with fresh mint leaves if desired.
