Lemon Brown Rice with Garlic & Thyme

Lemon Brown Rice with Garlic & Thyme is a zesty and aromatic dish that elevates wholesome brown rice with the bright flavors of lemon and the earthy notes of garlic and thyme. This simple yet flavorful recipe makes a perfect side dish or a light main course.
For a Serving Size of Two:
Ingredients:
- 1 cup brown rice (about 185 grams)
- 2 cups water or vegetable broth (about 480 ml)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Zest and juice of 1 lemon
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt to taste
- Fresh parsley or additional thyme for garnish
Procedure:
- Rinse the brown rice under cold water until the water runs clear. In a pot, combine the rice and water or vegetable broth, bringing it to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 10 minutes.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Fluff the cooked rice with a fork and add it to the skillet with the garlic. Stir in the lemon zest, lemon juice, thyme, and salt, mixing well to combine all the flavors.
- Cook for an additional 2-3 minutes until heated through. Adjust seasoning if needed.
- Serve warm, garnished with fresh parsley or additional thyme.
