For a Serving Size of Two:
Ingredients:
- 45 grams steamed brown rice
- 1 entire lemon
- 30 grams cooked kidney beans
- 30 grams chopped onion
- 30 grams chopped carrots
- 30 grams chopped cucumber
- 15 grams shredded cabbage
- 1 tablespoon rice wine vinegar
- 2 tablespoons peanuts
- 1 tablespoon coriander leaves
- Few basil leaves
- 1 tablespoon oil
Procedure:
- Keep rice for cooking and add lemon zest to it. After rice is cooked transfer the rice to the large bowl and discard the zest.
- In a pan, heat some oil add lemon zest and keep on the low flame for 5 minutes. The lemon oil dressing is ready.
- For dressing in a bowl, add 1-2 spoons lemon juice ,rice vinegar, salt, black pepper and lemon oil.
- Now take a bowl, add onion, carrot, cucumber, cabbage, beans and rice. Garnish it with Cilantro and Basil leaves and drizzle the dressing.
