Lemon Turmeric Energy Balls are a zesty and invigorating snack, perfect for a quick energy boost. For a Serving Size of Two:
Ingredients:
- 30 grams rolled oats
- 10 grams almond flour or finely ground almonds
- 15 grams dried dates (pitted)
- 1 teaspoon turmeric powder
- 1 tablespoon chia seeds
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon unsweetened peanut butter (homemade)
Procedure:
- Soak the dried dates in warm water for about 10 minutes to soften them if they are not soft already. Drain and pat them dry.
- In a food processor, combine the rolled oats, almond flour, and turmeric powder.
- Add the softened dates, chia seeds, lemon zest, lemon juice, and nut butter.
- Process until the mixture is well combined and starts to come together. It should be slightly sticky and hold together when pressed.
- Take small amounts of the mixture and roll them into bite-sized balls using your hands. If desired, roll the balls in coconut flakes to coat them.
- Place the energy balls on a parchment-lined tray or plate and refrigerate for at least 30 minutes to firm up.
