Lettuce Quinoa Spring Rolls

Here’s a quick, healthy, and great tasting flavorful dish filled with veggies. Filled with gluten free and protein rich quinoa and crispy lettuce, these spring rolls can be taken as a snack, filling lunch, or zesty appetizer for any occasion.

Quinoa is a pseudo grain with high nutritional value as it is rich in proteins, lipids, fiber, vitamins, and minerals, and has an extraordinary balance of essential amino acids. Quinoa also contains a high amount of health-beneficial phytochemicals including saponins and phytosterols which helps in reducing inflammation in body, thereby boosting immunity.

Ingredients
For spring rolls:
- 50 grams quinoa
- 20 g iceberg lettuce
- 10g French beans
- 10 g carrot
- 10 g cucumber
- 10g red bell pepper
- 3 rice paper wrappers
For dressing:
- 1 tablespoons rice vinegar
- 1 teaspoon honey
- ½ teaspoon garlic, minced
- 1/2 teaspoon ginger, minced
- 1 teaspoon sesame oil
- Salt, as per taste
- Black pepper, as per taste

Method
- Rinse and drain the quinoa and cook for 12 minutes in 1 and a half cups of water.
- While quinoa cooks, make the dressing by combining all the ingredients. Once quinoa is done, combine it with the dressing.
- Combine the quinoa, carrots, carrots, cucumber, bell peppers, French beans large mixing bowl. Set aside. Add salt and black pepper as per taste.
- Assemble one spring role at a time, by first placing a rice paper in warm water. Let it soften only slightly and transfer it to a flat surface. Add a lettuce leaf and spoon about 2 tablespoons of filling onto one side wrapper. Fold in the sides then roll it up like a burrito and continue until no filling remains.
- Serve with the sweet and tangy peanut sauce if desired.
