Doodhi Raita

For a Serving Size of Two:
Ingredients:
- 200 grams grated bottle gourd (doodhi)
- 200 grams plain yogurt (curd)
- 10 grams finely chopped onion
- 10 grams finely chopped cucumber
- 1-2 green chilies, finely chopped
- 1 teaspoon ginger, grated
- 1 tablespoon fresh coriander leaves, chopped
- 1 teaspoon roasted cumin powder
- Salt to taste
- 1 teaspoon lemon juice
Procedure:
- Peel and grate the bottle gourd. Squeeze out excess water if it’s too watery.
- In a mixing bowl, combine the grated bottle gourd with plain yogurt. Stir well to combine.
- Add finely chopped onion, cucumber, green chilies, grated ginger, and fresh coriander leaves to the yogurt mixture.
- Sprinkle roasted cumin powder and salt. Add lemon juice for a hint of tanginess. Mix everything thoroughly.
- Refrigerate the raita for at least 30 minutes to let the flavors meld. Serve chilled as a side dish with rice or parathas.
