Dry Makhana Sabji

Dry Makhana Sabji is a delicious and healthy stir-fry made with roasted fox nuts, onions, and spices. This dish is quick to prepare and offers a unique texture and flavor profile, making it a delightful addition to any meal. The nuttiness of makhana pairs well with the aromatic spices, creating a satisfying and nutritious dish.
For a Serving Size of Two:
Ingredients:
- 60 makhana (fox nuts), lightly roasted
- 100 grams finely chopped onion
- 100 grams finely chopped tomato
- 1 tablespoon ginger-garlic paste
- 1-2 green chilies, slit
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 2 teaspoons ghee
- Salt, to taste
- Fresh coriander leaves for garnishing
Procedure:
- In a pan, heat the oil over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add the finely chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and slit green chilies. Sauté for a minute until fragrant.
- Add the chopped tomatoes and cook until they soften. Add turmeric powder, coriander powder, and salt. Cook for an additional 2-3 minutes until the spices are well incorporated.
- Gently stir in the roasted makhana and garam masala. Mix well to coat the makhana with the spice mixture. Cook for about 5-7 minutes, stirring occasionally, until the makhana is heated through and slightly crisp.
- Adjust the seasoning as needed. Remove from heat.
- Garnish with fresh coriander leaves and serve hot.
