Goan Stir Fried Tofu

Ingredients:

  • 200 grams firm tofu, cubed
  • 1 small carrot, thinly sliced
  • 1 small bell pepper (capsicum), thinly sliced
  • 1 small onion, thinly sliced
  • 2-3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped (adjust according to your spice preference)
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon olive oil
  • 1 teaspoon sesame seeds
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh coriander leaves for garnishing

Instructions:

  1. Heat olive oil in a pan or wok on medium heat.
  2. Add minced garlic, grated ginger, and green chili. Sauté for a minute until fragrant.
  3. Add thinly sliced onions and cook until they turn translucent.
  4. Add sliced carrots and bell peppers. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still retain their crunch.
  5. Push the vegetables to one side of the pan and add the cubed tofu to the empty space. Cook the tofu for about 2-3 minutes on each side until it turns golden brown.
  6. Mix the tofu with the stir-fried vegetables.
  7. In a small bowl, whisk together soy sauce and tomato paste and sesame seeds. Pour the sauce over the tofu and vegetables. Mix well to coat everything evenly.
  8. Season with salt and freshly ground black pepper according to taste.
  9. Stir-fry for another 1-2 minutes until the tofu and vegetables are well coated and heated through.
  10. Garnish with fresh coriander leaves and serve hot.
