This Keto Mac and Cheese swaps traditional pasta with nutrient-dense cauliflower, keeping it low-carb while delivering the creamy, cheesy experience you love. For a Serving Size of Two:

Ingredients:

  • 150 grams cauliflower florets
  • 40 grams cheddar cheese
  • 30 grams mozzarella cheese
  • 20 grams cream cheese
  • 100 ml cream
  • 1 teaspoon garlic, minced
  • 1 teaspoon olive oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon mustard powder
  • Salt to taste
  • Fresh parsley for garnish

Procedure:

  • Steam the cauliflower florets until tender but firm (around 5-7 minutes). Drain and set aside.
  • In a pan, heat olive oil and sauté the minced garlic until fragrant. Add heavy cream and bring it to a gentle simmer. Stir in cheddar, mozzarella, and cream cheese. Keep stirring until the cheese melts and forms a smooth sauce.
