Smoky vegetables

Spring is here and so comes the fresh produce.Try this simple yet amazing side. You can have it with any carbs of your choice. You can make a larger bowl and have it on its own.
Ingredients
- 1 head of broccoli cut into bite sized pieces
- 1 head of cauliflower cut into bite sized pieces (any other vegetable of your choice)
- 1 red onion – quartered
- 1 small carrot – diced
- 2-3 mixed bell peppers – diced
For marinade –
- 3 tbsp gram flour
- 2 tbsp plain yogurt
- 1 tsp garam masala
- 1 tsp chilli powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- ½ tsp turmeric powder
- 1 tbsp lemon juice
- Salt & pepper to taste
- 1 tsp vegetable or olive oil
Method
- Bring a pot of water to a boil and add the carrots, broccoli florets and cauliflower florets. Boil until 50% cooked. About two or three minutes should do. Remove the vegetables from the water to cool.
- Mix all of the marinade ingredients and place the carrots, broccoli florets and cauliflower in a large mixing bowl with the sliced onion and pour the marinade over it all. Mix so that all of the vegetables are equally coated.Let it sit for 20-30 mins.
- Heat a wok, add oil and cook the vegetables well, heat a piece of coal and place it in a small bowl, pour little ghee and let the smoke evolve, place it inside the wok, cover and turn off the flame and let it sit for 5- 10 mins OR Prepare your barbecue grill. Skewer the vegetables and cook directly over the hot coals until cooked through.
- Season with salt & pepper to taste and serve immediately.
