Mango-Coconut Summer Dessert

For a Serving Size of Two:
Ingredients:
- 200 grams peeled and diced mango
- 150 grams coconut yogurt
- 30 grams shredded coconut
- 1 tablespoon chia seeds
- 1 tablespoon fresh lime juice
- 1/4 teaspoon vanilla extract
- Fresh mint leaves for garnish
Procedure:
- In a bowl, combine the diced mango and lime juice. Gently toss to coat the mango pieces and set aside.
- In a separate bowl, stir the coconut yogurt, shredded coconut, chia seeds, and vanilla extract until well combined.
- In serving glasses or bowls, layer the coconut yogurt mixture with the marinated mango. Start with a layer of the yogurt mixture, followed by a layer of mango, and repeat until you reach the top.
- Refrigerate the dessert for about 30 minutes to allow the chia seeds to swell and the flavors to meld.
- Garnish with fresh mint leaves before serving for a refreshing touch.
