Mango-Coconut Summer Dessert

Mango-Coconut Summer Dessert is a delightful and refreshing treat that captures the essence of summer with its tropical flavors. For a Serving Size of Two:

Ingredients:

  • 200 grams peeled and diced mango
  • 150 grams coconut yogurt
  • 30 grams shredded coconut
  • 1 tablespoon chia seeds
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon vanilla extract
  • Fresh mint leaves for garnish

Procedure:

  1. In a bowl, combine the diced mango and lime juice. Gently toss to coat the mango pieces and set aside.
  2. In a separate bowl, stir the coconut yogurt, shredded coconut, chia seeds, and vanilla extract  until well combined.
  3. In serving glasses or bowls, layer the coconut yogurt mixture with the marinated mango. Start with a layer of the yogurt mixture, followed by a layer of mango, and repeat until you reach the top.
  4. Refrigerate the dessert for about 30 minutes to allow the chia seeds to swell and the flavors to meld.
  5. Garnish with fresh mint leaves before serving for a refreshing touch.
