Mangolicious Chicken Edamame Salad

This Mangolicious Chicken Edamame Salad is a refreshing blend of sweet and savory flavors. For a Serving Size of Two:

Ingredients:

  • 150 grams cooked, shredded chicken breast
  • 90 grams peeled and diced mango
  • 100 grams shelled edamame
  • 50 grams diced red bell pepper
  • 50 grams diced cucumber
  • 30 grams mixed greens or baby spinach
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon sesame seeds
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon chili flakes
  • Salt and black pepper to taste

Procedure:
