Mediterranean Quinoa Salad

Mediterranean Quinoa Salad is a refreshing and nutritious dish that combines the wholesome goodness of quinoa with vibrant vegetables like cucumber, cherry tomatoes, red bell pepper, and red onion. The addition of olives and crumbled feta cheese brings a delightful savory flavor, while fresh coriander and a lemony olive oil dressing enhance the freshness of the salad. This salad is perfect as a light lunch, side dish, or snack, offering a delicious blend of Mediterranean flavors in every bite.
For a Serving Size of Two:
Ingredients:
- 60 grams quinoa
- 50 grams diced cucumber
- 50 grams halved cherry tomatoes
- 40 grams diced red bell pepper
- 30 grams finely chopped red onion
- 30 grams sliced olives
- 30 grams feta cheese, crumbled
- 10 grams fresh coriander
- 1 teaspoon extra virgin olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Procedure:
- Rinse the quinoa under cold water to remove any bitterness. In a pot, bring 120 ml of water to a boil. Add the quinoa, reduce heat, and simmer covered for about 15 minutes, or until the quinoa is tender and water is absorbed.
- Fluff the quinoa with a fork and let it cool to room temperature.
- While the quinoa is cooking, prepare the vegetables by dicing the cucumber, cherry tomatoes, red bell pepper, and red onion. Slice the olives and chop the fresh parsley.
- In a large mixing bowl, combine the cooked and cooled quinoa with the diced vegetables, sliced olives, crumbled feta cheese, and chopped coriander.
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper. Pour the dressing over the quinoa and vegetable mixture. Toss gently to coat all the ingredients evenly.
- Serve the Mediterranean quinoa salad chilled or at room temperature. Enjoy it as a light lunch, side dish, or refreshing snack.
