Millet Porridge with Berry Compote

This Foxtail Millet Porridge with Berry Compote combines creamy almond milk-infused millet porridge with a vibrant, antioxidant-rich berry compote, topped with a sprinkle of omega-3 packed mixed seeds.
For a Serving Size of Two:
Ingredients:
- 60 grams foxtail millet
- 400 ml unsweetened almond milk
- 4 seedless dates
- 4-5 pieces each of fruit – blueberries, cherries, and strawberries (Freeze them before use)
- 1 Inch cinnamon stick
- 1 teaspoon mix seeds (chia seeds, pumpkin seeds, flaxseeds)
Procedure:
- For compote, in a pan, put milk and dates and bring to boil and stir well so they break down.
- Add frozen fruits, water, and cinnamon to a pan; and cook over medium heat, stirring well in between. Leave it to cool.
- Rinse the millet thoroughly.
- Add millet to a saucepan, and add almond milk and 300 ml water.
- Put the flame to simmer for 12-15 minutes. Keep stirring frequently and in-between until the grains are tender.
- In a bowl, add millet porridge and compote over it. Top it with some mixed seeds and it is ready to serve.
