Mix Flour Cabbage Parantha is a nutritious and flavorful Indian flatbread made with a blend of whole wheat, bajra, and jowar flours, combined with finely chopped cabbage, onions, and aromatic spices. This parantha offers a delightful balance of textures and flavors, with the flours adding a hearty base and the cabbage providing a subtle crunch. It’s a versatile dish that can be enjoyed as a wholesome breakfast, a light lunch, or even a satisfying dinner.
For a Serving Size of Two:
Ingredients:
- 30 grams whole wheat flour
- 30 grams bajra (pearl millet) flour
- 30 grams jowar (sorghum) flour
- 50 grams finely chopped cabbage
- 50 grams finely chopped onion
- 1 green chili, finely chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon ajwain (carom seeds)
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1 tablespoon fresh coriander leaves, chopped
- 1 teaspoon ginger, grated
- Salt to taste
- Water as needed
- 1 teaspoon oil or ghee for cooking
Procedure:
- In a large mixing bowl, combine the whole wheat flour, bajra flour, and jowar flour.
- Add the finely chopped cabbage, onion, green chili, cumin seeds, ajwain, turmeric powder, red chili powder, chopped coriander leaves, grated ginger, and salt.
- Mix well to combine all the ingredients.
- Gradually add water, little by little, and knead the mixture into a soft dough. The dough should be pliable but not sticky. Cover the dough with a damp cloth and let it rest for 10-15 minutes.
- Divide the dough into small, equal-sized balls. Dust each ball with a little flour and roll it out into a round or oval shape, about 5-6 inches in diameter.
- Heat a tawa or griddle over medium heat. Place the rolled-out parantha on the hot tawa and cook for about 1-2 minutes until bubbles start to appear on the surface.
- Flip the parantha and cook the other side, drizzling a little oil or ghee around the edges. Press the edges with a spatula and cook until both sides are golden brown and cooked through.
- Serve the hot mix flour cabbage paranthas with yogurt or your favorite side dish.
