Mixed Sprouts Dosa

Traditional food is something on which we generally hog over. Here we are with the twist in traditional dosa by preparing it with sprouts. So, ditch the traditional dosa and give it a healthier toss! This dish offers a delightful crunch and is perfect for a healthy breakfast or snack, paired with coconut chutney or sambar.
For a Serving Size of Two:
Ingredients:
- 60 grams mixed sprouts
- 100 grams rice
- 30 grams white urad dal
- 1/4 teaspoon fenugreek seeds
- 1 finely chopped green chilly
- 1 inch grated ginger
- 2 tablespoons chopped coriander leaves
- Salt to taste
- 1 teaspoon oil
Procedure:
- Soak 100 g of rice, 30 g of white urad dal, and ¼ tsp of fenugreek seeds in water for 4-6 hours or overnight. Drain.
- In a blender, combine the soaked rice, urad dal, and fenugreek seeds. Add water gradually to form a smooth batter.
- Add the 60 g of mixed sprouts to the blender and pulse until they form a smooth batter. Add water as required.
- Transfer the batter to a bowl and mix in the finely chopped green chili (if using), grated ginger, and chopped coriander leaves. Add salt to taste.
- Heat a non-stick pan or dosa griddle over medium heat and lightly grease with oil.
- Pour a ladleful of batter onto the pan and spread it into a thin, even circle.
- Cook until the edges start to lift and the bottom is golden brown. Flip and cook for another 1-2 minutes.
- Serve the mixed sprouts dosa hot with coconut chutney, sambar, or your choice of side.
