Moong Sprouts Bajra Pesaruttu

Moong Sprouts Bajra Pesarattu is a nutritious Indian pancake made with bajra flour and moong sprouts. Packed with vegetables and spices, this savory dish is perfect for a hearty breakfast or light meal, offering a delightful combination of flavors and textures.
For a Serving Size of Two:
Ingredients:
- 60 grams moong sprouts
- 60 grams bajra flour
- 40 grams finely chopped onions
- 40 grams finely chopped tomatoes
- 30 grams grated carrot
- 1 finely chopped green chili
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon ginger-garlic paste
- Salt to taste
- 1 teaspoon sesame oil
Procedure:
- In a mixing bowl, combine the bajra flour and a little water to make a smooth batter. The consistency should be similar to pancake batter.
- Add the moong sprouts, finely chopped all vegetables, green chili, cumin seeds, mustard seeds, turmeric powder, ginger-garlic paste, and salt to the batter. Mix well.
- Heat a non-stick or cast-iron skillet over medium heat. Lightly grease with a few drops of oil. Pour a ladleful of the batter onto the skillet and spread it into a round shape.
- Cook for 2-3 minutes on one side, until golden brown and crispy. Flip and cook for another 1-2 minutes on the other side.
- Serve hot with chutney or yogurt on the side.
