For a Serving Size of Two:
Ingredients:
- 2 whole eggs
- 50 grams baby spinach
- 50 grams halved cherry tomatoes
- 50 grams diced avocado
- 30 grams cooked quinoa or brown rice
- 1 tablespoon feta cheese
- 1 tsp olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
Procedure:
- Boil or poach the egg to your preferred level of doneness. For a creamy texture, a soft-boiled egg works well.
- Once cooked, peel and set aside.
- Wash the spinach and cherry tomatoes. Dice the avocado and set aside.
- In a bowl, layer the cooked quinoa or brown rice as the base.
