No Sugar Almond Cookies

These No Sugar Almond Cookies are a delightful treat that packs a punch of flavor without the added sugar. Made with wholesome almond flour and enriched with the natural sweetness of dates, these cookies are both nutritious and satisfying. They are perfect for snacking or as a light dessert option.
For a Serving Size of Two:
Ingredients:
- 100 grams almond flour
- 50 grams ground almonds (or finely chopped)
- 1/4 teaspoon baking powder
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 2 tablespoons milk
- 1 tablespoon melted coconut oil
- 2 tablespoons finely chopped dates
Procedure:
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, ground almonds, baking powder, cinnamon powder, and salt. Stir well to ensure even distribution.
- In another bowl, mix melted coconut oil, vanilla extract, milk, and finely chopped dates until the dates are well incorporated.
- Gradually add the wet mixture to the dry ingredients, stirring until a dough forms. If the dough is too crumbly, add a little more milk, one teaspoon at a time.
- Scoop small amounts of dough and roll them into balls. Place them on the prepared baking sheet and gently flatten them with your hand or the back of a fork.
- Bake in the preheated oven for 12-15 minutes or until the edges are golden. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
