Oats Khichdi

Oats Khichdi is a nutritious and wholesome one-pot meal combining oats, moong dal, and mixed vegetables. It is a delicious and hearty dish, perfect for a comforting breakfast, lunch, or light dinner, offering a perfect balance of protein, fiber, and essential nutrients.
For a Serving Size of Two:
Ingredients:
- 60 grams rolled oats
- 40 grams yellow moong dal (split yellow lentils)
- 100 grams chopped mixed vegetables (carrot, peas, beans, etc.)
- 50 grams finely chopped onion
- 50 grams chopped tomatoes
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/4 tsp red chili powder
- 1/2 tsp grated ginger
- 2 teaspoons olive oil
- Salt to taste
- 500 ml water
- Fresh coriander leaves for garnish
Procedure:
- Rinse the moong dal thoroughly and cook in 250 ml water until soft. Set aside.
- In a pan, heat olive oil. Add cumin seeds and allow them to splutter. Then add chopped onions and grated ginger. Sauté until onions are translucent.
- Stir in chopped vegetables and tomatoes. Cook for 3-4 minutes.
- Add rolled oats, turmeric, red chili powder, and salt. Stir for a minute, then pour in the cooked moong dal and remaining 250 ml water. Let everything simmer for 5-7 minutes, stirring occasionally until oats are cooked and the khichdi has a soft consistency.
- Sprinkle fresh coriander leaves on top and serve hot with a side of yogurt or pickle.
