One Pot Veg Thai Curry is a special curry made with blend of vegetables especially prepared using coconut milk. It gives you a perfect tinge of creamy and spicy flavour altogether.

Ingredients:
- 3-4 Garlic cloves
- 10 ml Coconut milk
- 20 grams onion
- 20 grams bell peppers
- 20 grams tomatoes
- 10 grams beans
- 10 grams peas
- 10 grams rice
- 1 teaspoon red curry paste
- ½ teaspoon grated ginger
- 1 teaspoon lemon juice
- ½ teaspoon vinegar
- 1 cup vegetable broth
- 1 teaspoon coconut oil
Method:
- Heat oil in a pan and add ginger, garlic and onion. Sautee for 1-2 minutes. Then add other vegetables like carrot, beans, tomato and bell peppers.
- Let all the vegetables cook until they become tender over a medium flame.
- Now add rice to this mixture along with coconut milk, red curry paste, vinegar and vegetable broth.
- Bring this to boil and over medium/high flame.
- Wait until the rice are cooked. Once cooked, serve hot.
