Orange Olive Oil Fancies

Orange Olive Oil Fancies are delightful mini cakes that are bursting with fresh citrus flavor, complemented by the rich smoothness of olive oil. These lightly sweetened, soft, and moist treats are perfect for a guilt-free dessert or a light snack. The orange zest adds a vibrant note, while the nuts give a crunchy texture, making each bite a flavorful experience.
For a Serving Size of Two:
Ingredients:
- 60 grams whole wheat flour
- 2 tablespoons extra virgin olive oil
- 50 ml fresh orange juice
- 1 teaspoon orange zest
- 1 tablespoon jaggery powder
- 1/4 teaspoon baking powder
- A pinch of salt
- 1/4 teaspoon vanilla extract
- 1 teaspoon chopped nuts (e.g., almonds or walnuts) for garnish
Procedure:
- Preheat your oven to 180°C (350°F). Line a small baking tray or muffin molds with parchment paper or lightly grease with olive oil.
- In a mixing bowl, combine the olive oil, fresh orange juice, orange zest, jaggery powder, and vanilla extract. Whisk until well combined.
- In another bowl, mix the whole wheat flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until everything is incorporated and smooth. The batter should be pourable but thick.
- Pour the batter into the prepared molds or tray. Sprinkle chopped nuts on top for added crunch. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the fancies to cool in the tray for a few minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
