Pea Shakshuka

Pea Shakshuka is a vibrant and healthy twist on the classic Middle Eastern dish, featuring a flavorful tomato sauce filled with peas and spices, topped with perfectly poached eggs. This dish is not only colorful and appetizing but also easy to prepare, making it a great choice for breakfast, lunch, or dinner.
For a Serving Size of Two:
Ingredients:
- 200 grams frozen or fresh peas
- 100 grams onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 200 grams canned diced tomatoes (or fresh tomatoes, chopped)
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp red chili flakes (optional)
- 4 eggs
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh cilantro or parsley for garnish
Procedure:
- Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Sauté until softened, about 5-7 minutes. Add garlic and cook for an additional minute.
- Add the Tomatoes and Spices: Stir in the canned diced tomatoes, ground cumin, paprika, and red chili flakes. Season with salt and pepper. Simmer for 5-7 minutes until the mixture thickens slightly.
- Incorporate the Peas: Add the peas to the skillet and stir to combine. Create small wells in the mixture for the eggs.
- Add the Eggs: Crack an egg into each well and cover the skillet. Cook until the eggs are set to your liking, about 5-7 minutes for runny yolks.
- Garnish and Serve: Remove from heat, garnish with fresh cilantro or parsley, and serve hot with crusty bread or pita.
