Peppermint Cookies

These Peppermint Apple Cookies are a delightful blend of whole wheat flour, coconut oil, and apple puree, infused with refreshing peppermint and vanilla extracts. The cookies are soft and lightly sweetened with apple puree, offering a subtle yet satisfying flavor. They are perfect for a healthier treat or a cozy snack with tea.
For a Serving Size of Two:
Ingredients:
- 60 grams whole wheat flour
- 2 teaspoons coconut oil
- 60 grams unsweetened apple puree
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon vanilla extract
- Two pinches of salt
Procedure:
- Preheat your oven to 175°C (350°F). Line a baking sheet with parchment paper.
- In a mixing bowl, combine whole wheat flour, baking soda (if using), and a pinch of salt.
- In another bowl, mix coconut oil and apple puree until well combined. Add peppermint extract and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough is too dry, add a bit more apple puree.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the back of a spoon or your fingers.
- Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy the peppermint cookies as a snack or with tea.
